Tomato-Basil Zucchini

1 10 3/4 oz. can Campbell's Healthy Request Condensed Tomato Soup
2 tbs. grated Parmesan cheese
1 tbs. lemon juice
1/2 tsp. dried basil leaves, crushed
1/2 tsp. garlic powder
4 medium zucchini, sliced (about 6 cups)
1 small green pepper, cut into 2-inch long strips (about 1 cup)
1 large onion, sliced (about 1 cup)
fresh basil for garnish

In Dutch oven mix soup, cheese, lemon juice, basil, garlic powder, zucchini, pepper and onion. Over medium heat, heat to a boil.

Reduce heat to low. Cover and cook 15 minutes or until vegetables are tender, stirring often. Garnish with fresh basil.
Serves 8.

Delicious any time of the year, this side dish is at it's best in the summer when zucchini is plentiful. Tote it a a potluck supper or a family reunion. Serve it with soup and fresh fruit for a quick and breezy meal.
