Hearty
Tomato Rice Soup
Vegetable cooking spray
1 small zucchini, coarsely chopped (about 1 cup)
1/2 tsp. dried basil leaves, crushed
1/8 tsp. garlic powder OR 1 clove garlic, minced
1 10 3/4 ounce can Campbell's Healthy Request Condensed Tomato Soup
1 1/3 cupwater
1 tsp. lemon juice
1 1/2 cups cooked rice, cooked without margarine or salt.
2 tbs. grated Parmesan cheese
Spray medium saucepan with cooking spray and heat over medium heat 1 minute.
Add zucchini, basil and garlic powder and cook until tender-crisp.
Add soup, water, lemon juice and rice. Heat through. Sprinkle with cheese.
Serves 4.
Note: Paired with a salad or sandwich, this soup fits the bill for lunch
at school or office. Transport the soup in an insulated vacuum bottle,
or keep it chilled until lunch time and reheat in a microwave oven.
