Crustless Broccoli or Spinach Quiche

(modified from a Weight Watchers recipe)

1/2 cup well-drained cooked chopped broccoli or spinach
2 TBS finely chopped scallion (green onion)
2 TPS imitation bacon bits
6 oz. Shredded Swiss Cheese, divided
3 egg whites
1/2 evaporated skimmed milk
dash of pepper or cayenne

Preheat oven to 325 degrees. In small bowl, combine broccoli (or spinach), scallion, imitation bacon bits, and 3 ounces cheese. In another small bowl, beat together egg whites, milk, and pepper; pour into pie pan that has been sprayed with oil spray. Sprinkle the remainder of the cheese on top. Bake for 30 minutes (or until knife, inserted in center, comes out clean). Remove from oven and, keeping warm, let stand 10 minutes before serving.

Note: I usually use a low fat mozzarella or low fat cheddar cheese to save more fat grams. This recipe can be doubled easily. I sometimes add fresh mushrooms when I make this.
