Vegetable Rice Pilaf

Vegetable cooking spray
1/4 cup chopped green or red pepper
2 cloves garlic, minced
1/2 tsp. dried basil leaves, crushed
1/8 tsp. black pepper
1 cup uncooked regular long-grain rice
1 16-oz. can Campbell's Healthy Request Ready to Serve Chicken broth
3/4 cup frozen mixed vegetables

Spray medium skillet with cooking spray and heat over medium heat 1 minute. Add green pepper, garlic, basil, black pepper and rice. Cook until rice is browned and green pepper is tender and crisp, stirring constantly.

Stir in broth. Heat to a boil. Reduce heat to low. Cover and cook 10 minutes.

Stir in vegetables. Cover and cook 10 minutes more or until rice is done and most of liquid is absorbed.

Serves 4.

Note: Try this dish as a healthier alternative to packaged rice mixes. Rice is an excellent source of complex carbohydrates, as well as calcium, iron and B vitamins.
